700 g of pears (if it possible pick the “Abate” pears)
2 dl of whipping cream
1 organic lemon
1 large spoon of sugar

Peal the pears and cut them into pieces. Place them in a pan, and covered them with some water. When they are soft enough, put them in a mixer and reduce them to a puree. Place them back into the pan and cook over a medium heat, adding the sugar and the juice of half a lemon. Mix well and let it cool down. Whip the cream and stir gently with the puree until they are mixed well. Place the mousse into a large bowl and let it rest in the fridge. When it is time to serve it, decorate with some biscuits.
