400 g strawberries medium size to use whole size
150 g strawberries for the puree
4 tablespoons of sugar
1 blood orange untreated
1 handful of shelled pistachios
cat’s tongue cookies
Chop the pistachios finely. Wash and clean the strawberries to use them whole size. Dry and place them in a bowl in the fridge to rest. Blend the rest of strawberries with sugar for the puree and put it in a bowl. Squeeze the orange, add it to the puree, mix well and let it rest in the refrigerator. Half hour before serving the dessert, remove the whole strawberries from the refrigerator and cut into small pieces. Compose individual bowls for each diner with sliced strawberries and sprinkle with the puree; garnish with chopped pistachios and serve with cat’s tongue cookies or other pastry.
