General characteristics:
White sparkling wine made from the Prosecco grape following the traditional method which allows a secondary fermentation to take place in the bottle ‘sur lie' (on its lees) giving the wine particular and unique characteristics. After the indispensable separation of the wine and its sediment, the remaining wine is a bright straw yellow colour (slightly cloudy if shaken too energetically) with a lively and evident development of bubbles. It has an elegant and complex bouquet: from its characteristic fruity aroma to hints of bread crust which is in a state of constant evolution due to the yeast in the bottle. On the palate it is crisp and pleasantly bitter, the ultimate dry! This wine of character is extremely digestible and is therefore especially suitable to occasions of general conviviality or perhaps savouring traditional, locally produced salamis, the queen of which must be the ‘sopressa'
